Quick Facts:

Ingredients List:

  • 2 lbs ostrich meat, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 large onions, chopped
  • 4 cloves garlic, minced
  • 3 tablespoons sweet paprika
  • 1 teaspoon caraway seeds
  • 2 carrots, chopped
  • 2 bell peppers, diced
  • 1 can (14 oz) diced tomatoes
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 bay leaves
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Step-by-Step Instructions:

  1. Sauté Onions and Garlic: In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the onions and garlic, cooking until the onions are translucent and soft, about 5-7 minutes.

  2. Brown the Meat: Increase the heat to medium-high, add the remaining olive oil, and brown the ostrich meat cubes on all sides. This may need to be done in batches to avoid overcrowding the pan.

  3. Add Spices and Vegetables: Sprinkle the paprika and caraway seeds over the meat. Stir to coat evenly. Add the chopped carrots, and diced bell peppers and cook for a few more minutes.

  4. Deglaze and Simmer: Pour in the red wine (if using), scraping up any browned bits from the bottom of the pot. Add the diced tomatoes, beef broth, and bay leaves. Bring to a boil, then reduce heat to low and cover.

  5. Cook: Let the goulash simmer gently for about 1.5 to 2 hours, or until the meat is tender and the sauce has thickened.

  6. Season and Serve: Remove the bay leaves, and season with salt and black pepper to taste. Serve hot and garnished with chopped parsley.

Tips and Variations:

  • Spice Variations: For a spicier goulash, add a pinch of cayenne pepper or use hot paprika instead of sweet.
  • Vegetable Additions: Potatoes or carrots can be added to the stew for the last hour of cooking to make it a more hearty dish.
  • Serving Suggestions: This goulash pairs wonderfully with crusty bread, buttered egg noodles, or boiled potatoes.
