Slow-Cooked Ostrich & Root Vegetable Stew

Serves: 4–6
Prep Time: 15 minutes
Cook Time: 6–8 hours (slow cooker)

Ingredients

  • 2 lbs ostrich stew meat

  • 3 carrots, chopped

  • 2 parsnips or potatoes, chopped

  • 1 onion, diced

  • 3 cloves garlic

  • 3 cups beef broth

  • 1 tbsp tomato paste

  • 1 tsp dried thyme

  • Salt and pepper

Instructions

  1. Add all ingredients to a slow cooker.

  2. Stir gently to combine.

  3. Cook on low for 6–8 hours until tender.

  4. Adjust seasoning and serve warm.
