This festive 4th of July BBQ recipe features Superior Ostrich Fan Filet Mignon—the leanest, most tender cut of ostrich—grilled to perfection and paired with sweet corn rounds, charred onions, juicy tomatoes, and green bell peppers. It’s a crowd-pleaser that brings steakhouse flavor to your backyard cookout.

Ingredients (Serves 4):

1.5 lbs Superior Ostrich Fan Filet Mignon, cut into 1.5” cubes

2 ears corn, sliced into thick rounds

1 large white or yellow onion, cut into wedges

8–10 cherry or cocktail tomatoes

1–2 green bell peppers, cut into chunks

Olive oil

Salt & pepper

1 tsp smoked paprika

1 tsp garlic powder

Wooden or metal skewers

Optional BBQ Glaze:

¼ cup BBQ sauce

1 tbsp honey or maple syrup

1 tbsp balsamic vinegar

Instructions:

If using wooden skewers, soak them in water for at least 30 minutes.

In a large bowl, toss the Superior Ostrich Fan Filet Mignon cubes with olive oil, salt, pepper, smoked paprika, and garlic powder. Let sit for 15–30 minutes.

Lightly oil and season the vegetables with salt and pepper.

Thread skewers in this order: bell pepper, filet mignon cube, onion wedge, tomato, corn round. Repeat if space allows.

Preheat grill to medium-high and lightly oil the grate.

Grill skewers for 8–10 minutes, turning every 2–3 minutes until the filet mignon is nicely charred and reaches 125–130°F internal temperature for medium-rare.

During the final minutes of grilling, brush skewers with the optional BBQ glaze if using.

Remove from grill and let rest briefly before serving.

Serving Tip:
Serve with baked beans, grilled peach salad, or herbed potatoes. Add a drizzle of extra BBQ sauce or a squeeze of lime to brighten the dish.
