Garlic Herb Ostrich Steak with Lemon Pan Sauce

Ingredients

  • 2 ostrich steaks

  • 1 tbsp olive oil

  • 2 cloves garlic, smashed

  • 1 tbsp fresh rosemary or thyme

  • Salt and cracked black pepper

  • ½ cup beef or bone broth

  • Juice of ½ lemon

  • 1 tbsp butter

Instructions

  1. Pat steaks dry and season generously with salt and pepper.

  2. Heat olive oil in a cast-iron skillet over medium-high heat.

  3. Sear steaks 3–4 minutes per side until medium-rare. Remove and rest.

  4. Lower heat. Add garlic and herbs, sauté briefly.

  5. Deglaze pan with broth and lemon juice. Simmer 2–3 minutes.

  6. Whisk in butter, spoon sauce over steaks, and serve.
